If you’re the ‘silver lining’ type, then hey – at least we got the food trucks comin’ outside the city to neighborhoods like mine in Hermitage. I can say that one good thing that has surfaced from this coronavirus pandemic is that I’ve discovered a few new meals because of it, and 1 Spudtacular Food Truck is chief among them.

I discovered the BestFoodTrucks.com site a couple of weeks ago after my girlfriend pointed out that the ML Rose truck was parked outside of a carpet store in Donelson. Since then, it’s been a daily routine for me. Wake up, see if any good or new food trucks are going to be in my neighborhood, then I can proceed with my day. I’ve even started documenting where the trucks are going to be each day here on SoBros Network.

Since the stay-at-home orders have hit, it’s made it kinda hard for us to actually go out and review restaurants. Thanks to the food trucks coming out to us, we’ve found a way to kick that shit back up. So, let’s dive into it.

You can check out the website, including the full menu of 1 Spudtacular Food Truck here. I had to stop by and see what this truck was all about as soon as I saw pictures of the menu. But, what particularly caught my attention was ‘The Smasher.’ Yes, it’s literally a cup of smashed potatoes with pulled pork (you have options for meat), butter, sour cream, barbecue and it’s all topped with cheese and green onions.

Food: 7.3/10 – It might not look appetizing. I shared the photo of the cup on social media and got a few puke emojis in return. But, I can assure you that this thing is comfort food at its finest. Good quality barbecue that was tender, CHUNKS of potatoes that were hearty, and you can’t spell comfort food without B U T T E R. But, to me, it was the barbecue sauce, cheese, and green onions that really provided a nice flavor to it all. That tied the whole thing together. Just get ya a fork, dig in, and thank me later.

Value: 5/10 – Standard issue value here. At $11, you’re getting what honestly, for your own health, SHOULD be a meal on its own.

Overall: 6.15/10 – I’m keeping an eye out for 1 Spudtacular Food Truck from now on. I’m eager to try the loaded waffle fries and the Philly cheese steak stuffed potato, but ‘The Smasher’ instantly became one of my favorite binge dishes in the city. I can see this thing hitting especially hard in the fall during football season. If you’re a fan of the potato like me, this truck does ’em right.
