Alright, guys – kickin’ off another new series that Cadbury and I have talked about doing for quite some time. Big picture? We want to put together a SoBros cookbook at some point. Smaller picture? I’m going to be sharing recipes as they come in here on Patreon.

I have a few things in the chamber, but I’m starting with this one because I just made these sandwiches a couple of weeks ago. They’re the perfect hearty sandwich, and are quick and easy to make. Shaved beef is a bit harder to come by (at least around here in Nashville), and doing it manually takes times. Plus, I do try to be at least somewhat aware of how much red meat I eat. That’s why when I’m cookin’ up these philly-inspired sandwiches, I start with some chicken. Some of y’all know what a big fan of the onion I am, so any time I can add onions and peppers to a dish, I’m all over it.

What you’ll need: 

  • 2 chicken breasts
  • 2 bell peppers
  • 1 onion
  • Hoagie buns
  • Old Bay seasoning
  • Provolone cheese
  • Sweet Baby Ray’s – “Ray’s Secret Sauce”
  • Cooking spray/olive oil

How to do it: 

This is an easy one, y’all. Start by oiling up a pan or two and cooking up the chicken – dice and slice that sumbitch. I sauté my onions and peppers in a separate pan because I can never seem to time everything to be cooked at the same time, but if you’re a certified chef, then by all means, go for it. 

Throw the hoagies in the toaster oven to get all toasty. Once the chicken, onions, and peppers are cooked, mix ’em all together. Take a couple of scoops and sling ’em in the pan you just emptied. Set a piece of provolone on top of each scoop, and let it simmer until it starts to melt a bit. 

Once the cheese melts, take those couple of scoops, and put it on your hoagie. Spread a little bit of the Sweet Baby Ray’s secret sauce on the bun, and sprinkle a little bit of Old Bay on top. Obviously, you can go with your sauce of choice on this one – a horseradish sauce would work best for this recipe, and I like Sweet Baby Ray’s because horseradish can very easily be overbearing, but this secret sauce is a little more subtle. The Old Bay gives this sandwich just a bit of a savory kick. 

Good, good eatin’ right here. 

Here’s what the final product looked like: 

It looks like a sloppy mess, but that melted cheese on top really held the sandwich together well. I burnt the bread, which was unfortunate given I was making this one specifically FOR this column, but hey – you don’t have to make the same mistakes I do. That’s the beauty of what we do here. We all learn something. 

With the Super Bowl right around the corner, this one is THE perfect game day sammich.
