Listen, you won’t find anyone who loves Crockpot szn more than I do. But, since they tend to be pretty hearty and heavy meals, it’s easy to tack on the pounds throughout the colder months – chili, stew, potato soup…it’s all adding to the belly. So, what’s a man to do when he wants something a little lighter on the calories but still wants the comfort of a slow cooked meal on a cool fall night? He turns to this awesome skinny imitation sloppy joes recipe, of course!
What You’ll Need
- 1lb ground sirloin
- 1tbsp steak seasoning
- 1tbsp red wine vinegar
- 1tbsp Worcestershire sauce
- 2tbsp tomato paste
- 2 cups tomato sauce
- 1 medium onion, minced (or diced)
- 1/4 cup red bell pepper, minced (or diced)
- 4oz mushrooms, minced (or diced)
- 2 cloves minced garlic
- Potato rolls
- Optional: cayenne pepper to your liking if you want to give this dish a kick.
- Fucking TUMS! You’re gonna need ’em if you eat enough of this.
How to Do It
1. This could not be easier! In a pan, brown the ground sirloin.
2. Dice your veggie combo, however you want to do it – I dice up my mushrooms, onion, and red bell pepper.
3. Combine diced veggies, browned ground sirloin, steak seasoning, red wine vinegar, Worcestershire sauce, tomato paste, tomato sauce, and garlic in a Crockpot, stir it all up, and cook on low for six hours.
4. If you minced the veggies, you should get more of a “paste” consistency. Feel free to load those potato rolls up and eat ’em as a sandwich. If you diced ’em, you should get more of a “sauce” consistency. In that case, you can just split open the rolls and spoon the Sloppy Joe over top of ’em and eat it with a fork and knife. That’s how I do it!
Note: You can follow the original recipe a little more closely here. I like throwing everything in a Crockpot because slow cooking is the way. I don’t know – it just seems like the flavors meld together a little better. Also, I dice the veggies in mine instead of mincing. The original recipe calls for a carrot, but I leave that out (fuck that!), and sometimes the onion too. Doing so usually means my version is a little thinner, and that’s not very conducive to eating it as a sandwich, hence the “fork and knife” method…but, you do you!
