Tailgate Brewery in Nashville is kicking off 2024 with one of the most flavorful pizzas I’ve ever had.
For January’s pizza of the month, Tailgate introduced the Birria Pizza. I’ve noticed a trend around town where multiple restaurants have been using and working with birria style dishes and I’m tickled pink about it. Birria is a Mexican stew served with the braising liquid, but there are also many different styles of preparation and seasonings that can be altered.
I’m pleased to tell ya’ll that it works wonderfully on pizza. The Birria Pizza includes mozzarella, beef in birria sauce, cilantro, lime, and a side of birria dipping sauce.
The beef was insanely tender and pleasant while the cilantro and lime balances out with a nice citrus ending. Tailgate included the birria dipping sauce on the side, and that was the real star of the show for this dish. Forget the ranch and pizza debate, I want to dip all my pizza in birria sauce from now on.
I paired it with the Honey Pear Wild Ale, but I wish I would’ve gone with a sweeter brew like a cider. The dish was very savory so I think the Tailgate Cider would have been a nice counter-flavor.
