Football season is right around the corner. I can’t imagine a better way to spend a football Saturday or a football Sunday (or BOTH) than with this spur-of-the-moment, we-just-pulled-it-out-of-our-ass slider night buffet! My fiance and I tried this out a couple of months ago when we had my family over for Mother’s Day. It was a panic move because rain threatened our prospects of grilling out. So, we brainstormed a quick replacement plan and came up with the idea to set up a buffet of sliders: hot ham and cheese (which we’ve made before), cheeseburger, bbq chicken, and cheesesteak. It was an absolute hit – I couldn’t believe we actually pulled it off. As soon as I saw the reaction the sliders got from my family, I knew this was something I wanted to share with you guys in the SoBros Recipe Book. Everything we do is learn-as-we-go DIY….even prepping dinner for guests, as it turns out. My recommended sides on slider night would be waffle fries, tater tots, mac and cheese, and/or baked beans – MMM MMM DAMN! Let’s break this down by slider.
Hot Ham and Cheese Sliders
What you’ll need:
- A bajillion King’s Hawaiian rolls (not really a bajillion – but to your liking…we entertained 16 people, and went through 48 rolls. So, if you’re just trying this out for a smaller crowd, adjust accordingly)
- One pound of your favorite deli ham
- Sliced cheddar cheese
- Everything bagel seasoning
- Butter
How to do it:
This is probably the easiest one to make.
1. Fashion your sandwiches as you like ’em – put some ham and cheese on a roll, and place it onto a baking sheet. Repeat for as many sandwiches as you want to make.
2. Melt the butter.
3. Brush the tops of the buns with the butter.
4. Sprinkle the everything bagel seasoning over the top of the sliders.
5. Pop that baking sheet in the oven for about 10-15 minutes, or until done, on 350 degrees. That’s it. That’s really all there is to the hot ham and cheese sliders, and they have been a hit every time we’ve served them. The secret is the everything bagel seasoning.
Cheeseburger Sliders
What you’ll need:
- King’s Hawaiian rolls
- Ground beef
- McCormick Grill Mates Hamburger Seasoning
- Old Bay (come on, y’all know I put that shit on everything)
- Sliced cheddar cheese
How to do it:
1. Another pretty straightforward one – take about a pound of ground beef, hit it with the hamburger seasoning and Old Bay (both technically optional, but come on – you want your burgers to kick a bit, right?), and mix it all together.
2. Form patties by rolling the seasoned ground beef into balls about the size of golf balls and then pressing it with a burger smasher (if you don’t have one, just flatten with your fist – it’s fine).
3. Cook the patties until done. Meanwhile, toast your Hawaiian rolls.
4. When the burgers are close to being done, top ’em with a piece of your sliced cheddar cheese to fit the patty.
5. Once the patty is cooked, and the cheese is slightly melted, throw it on a toasted bun.
Cheesesteak Sliders
What you’ll need:
- King’s Hawaiian rolls
- Shaved beef (we can buy pre-shaved beef at our local grocery store, Kroger, and it saves a TON of time)
- One bell pepper
- One white onion
- Provolone cheese
- Sweet Baby Ray’s Secret Sauce
How to do it:
1. Slice your onions and peppers and throw ’em in a skillet (they’ll take longer to cook than your shaved beef) for a couple of minutes.
2. Toast your hawaiian rolls and have them at the ready.
3. Cook your shaved beef, pepper, and onion until done – once it’s done, pull a scoop aside in the skillet and put a bit of provolone cheese on top of it.
4. Once the cheese melts, put your scoop of cheesesteak goodness on a roll, and then hit it with a squirt of your secret sauce. Boom – done.
BBQ Chicken Sliders
What you’ll need:
- Hawaiian rolls
- Chicken breasts (we used four for a larger crowd)
- Apple cider vinegar
- Your favorite BBQ sauce
- McCormick Grill Mates Smokehouse Maple seasoning
How to do it:
1. Throw your chicken breasts, BBQ sauce, seasoning, and apple cider vinegar in a Crockpot. You’ll use at least an entire bottle of BBQ sauce. Don’t be afraid to be generous with it. Use about a cup of apple cider vinegar – believe it or not, it actually acts as a meat tenderizer, so your chicken will be nice, moist, and tinder. Cook it on low for six hours.
2. After the chicken is cooked, shred it, and scoop it onto a roll. That’s it – you have to get started early on this one, but it’s pretty easy.
Recommended Order of Operations
On their own, these are four super simple and easy recipes. But, if you’re going to take a stab at all four in the same night like we did, it’ll take a little bit of time management and logistical planning to pull it off. Here’s how we did it:
1. Get the chicken in the crockpot at least six hours prior to dinner time.
2. Slice the onions and peppers for the cheesesteak sliders
3. Make the patties for the cheeseburger sliders.
4. Start cooking the cheeseburger patties, the shaved beef, and saute the onions and peppers.
5. Prep the hot ham and cheese sliders, and throw ’em in the oven.
6. Toast the rolls for the BBQ chicken, cheeseburger, and cheesesteak sliders
7. Put ’em all together. Once they’re all prepared, arrange them on different serving plates and tell your guests to have at it!
