We’re going to do a little riffin’ today on the SoBros Recipe Book. That is what your boy does best in the kitchen. “Hmmm….wonder what it would taste like if I added THIS?” “Shit, we don’t have _______. Maybe I can just use ______ instead.” I found this recipe for a “paprika roasted chicken” in a WeightWatchers cookbook – four ingredients….chicken, chick peas, tomatoes, and garlic. Two spices: black pepper and paprika. While it was a good dinner, I always felt like it could’ve been a little more filling, and it could’ve been a little more flavor. So, I just added my favorite roasted veggies to it to see what would happen. It was a game-changer, and now it’s one that I make pretty much every week. This dish serves four, or you can have a couple of plates at dinner, and two lunches for the next day. 

Healthy Chicken Roast

What You’ll Need:

  • Olive oil
  • 4 chicken cutlets, or 2 chicken breasts (halved into four pieces)
  • Seasonings: salt, black pepper, paprika
  • Optional 4th seasoning (pick 1): cajun seasoning, Old Bay, curry powder
  • 1 15oz can of chick peas, drained
  • 1 pack of small red salad tomatoes (I use Nature Sweet Cherubs)
  • 1 small red onion, diced
  • 6-8 garlic cloves (to your liking)
  • 1 pack of sliced mushrooms
  • 1 squash, sliced
  • 1 zucchini, sliced

How to do it: 

1. Get that prep work done – dice up the onion, and slice the squash and zucchini. Preheat the oven to 425. 

2. Heat up some olive oil in a skillet at medium high heat. Throw in the chicken and season it with the salt, pepper, paprika, and whatever you want to use as the 4th season. I love the curry powder myself, but my fiancé loves the cajun seasoning. Old Bay is good, but I cook everything with Old Bay, so Aura prefers that I use something a little different for this dish. Regardless, you’re really going to want to coat that chicken with the paprika. That’s the spice that really ties the whole dish together. Cook it until you get a little bit of blackened action going, but the chicken isn’t quite fully cooked yet, and set it aside. 

3. In a baking dish, add the chick peas, garlic, tomatoes, diced onion, squash, zucchini, drizzle olive oil over it, sprinkle some paprika and that 4th seasoning of your choice over it, and stir it all up so that the veggies are good and coated. Put in the oven and roast for 10 minutes. 

4. Take the dish full of veggies out, put the 4 pieces of chicken on top of it, and roast that bitch for 35 more minutes. Once it’s done, take it out and enjoy. That easy. The way the tomatoes burst after awhile, and the way that those juices combine with everything else makes sweet, rich, and beautiful music.
