*Bernie Sanders meme* I am once again diving into a WeightWatchers cookbook to try a new recipe. But, we’re trying something new for this one. I took a stab at moving this series to a video format for a couple of reasons…one, I felt I wasn’t doing the recipes justice just by writing about them. Food is a sensory experience, so I wanted you guys to SEE the food as I was making it. Two, it’s just plain fun to take a stab at some cooking videos. So, let’s get back into that WeightWatchers cookbook for something that I’m stoked to share with you guys because it may be one of the quickest and cheapest meals I’ve ever discovered….but, also…it helps if you’re trying to drop a few pounds like me. Dig in!

What You’ll Need

  • 2 Tbsp olive oil
  • 1/2 tsp crushed red pepper flakes
  • 3 cups (or 2 15oz cans) of chickpeas, rinsed and drained
  • 2 cups jarred, fat-free marinara sauce
  • 10oz frozen chopped kale (or sub spinach like I did the second time I made this and it was even better) 
  • 1/4 cup grated parmesan cheese

What To Do 

  • Per WeightWatchers: “In large skillet, heat oil and crushed red pepper over medium until fragrant, stirring occasionally, about 3 minutes. Add chickpeas to pan and increase heat to medium-high. Cook, stirring often, until chickpeas are heated through, about 2 minutes. Stir in marinara sauce and 1⁄2 cup water. Scatter frozen kale on top of chickpeas. Cover and cook, stirring occasionally, until kale is tender, 7 to 8 minutes. Sprinkle with cheese.”
